Keeping the Honey House clean and properly sanitized helps protect food safety, equipment, and the next person using the space. Every user is responsible for cleaning and sanitizing their workspace and equipment before and after use.
Before You Begin
Before handling honey or food-contact equipment:
โ Wash your hands
โ Remove or cover jewelry as appropriate
โ Make sure your work surface is clean
โ Check that equipment is clean and ready to use
โ Gather the appropriate cleaning and sanitizing supplies
Cleaning vs. Sanitizing
Cleaning removes honey, wax, dirt, and other debris from a surface.
Sanitizing reduces microorganisms on a clean surface to an appropriate level.
Always clean a surface before sanitizing it. Sanitizer is not a substitute for cleaning.
General Cleaning Process
For food-contact surfaces and equipment:
1. Remove debris
Scrape away excess honey, wax, propolis, and other material.
2. Wash
Wash equipment and surfaces with the appropriate soap/detergent and water.
3. Rinse
Rinse away soap and loosened debris with clean water.
4. Sanitize
Apply the appropriate food-contact sanitizer according to the product's instructions and required concentration/contact time.
5. Air dry
Allow sanitized equipment to air dry completely. Avoid wiping food-contact surfaces with a potentially contaminated towel after sanitizing.
Honey House Sanitizers
PURELL Foodservice Surface Sanitizer
Use according to the manufacturer's directions for food-contact surfaces.
Important: Follow the product label for dilution, application, and required contact time. Do not mix sanitizers with other cleaning chemicals.
SaniDate
SaniDate is a peroxyacetic acid-based sanitizer used for food-contact surfaces and equipment.
Important: Always follow the product label and Honey House instructions for the correct concentration, contact time, and handling requirements.
Never mix cleaning chemicals or sanitizers together. Use each product only as directed.
Equipment-Specific Cleaning
Extractor
Remove remaining honey and wax, then clean and sanitize food-contact surfaces according to the extractor's instructions.
EZ Fill
Flush and clean the honey-contact components according to the equipment instructions. Make sure no honey remains in the filling system before storage.
Uncapping equipment
Remove wax and honey, wash thoroughly, rinse, sanitize, and allow to air dry.
Buckets and food-contact containers
Empty, wash, rinse, sanitize, and air dry before returning them to storage.
At the End of Your Session
Before leaving the Honey House:
โ All honey and wax have been removed from equipment
โ Food-contact surfaces have been washed, rinsed, and sanitized
โ Equipment is dry and properly stored
โ Floors and work surfaces are free of honey and debris
โ Trash and waste have been disposed of appropriately
โ Sinks and surrounding areas are clean
โ All supplies have been returned to their designated locations
โ Any equipment problems or spills have been reported to Honey House staff
